梅樹的花就是梅花。

梅花的總品種達300多種。適宜觀賞的梅花種類包括大紅梅、台閣梅、照水梅、綠萼梅、龍游梅等品種。觀賞類梅花多為白色、粉色、紅色、紫色、淺綠色。

取之當國花, 因有三蕾五瓣，代表三民主義及五權憲法, 愈冷愈開花。

台灣梅子的品種有胭脂梅、長藤、大青、桃形梅、萬山、山連、野生梅等。

梅樹的鮮果﹙青梅﹚滋味苦澀含「氰酸」毒素，不宜生食，通常以鹽漬、糖漬加工製成食品。清明節前後採收的深綠色梅子適合製成脆梅，當果實變成淡綠色則適合做成紫蘇梅、話梅、茶梅及製作梅酒。等梅子成熟後變黃綠色則可用來釀製梅醋，製作梅子果醬與果汁，完全成熟的梅子則不適合做成加工品。
